Ingredients
- 3 cloves garlic, minced
- juice from 1 large lemon
- 1/2 cup dry white wine
- 1/4 cup extra virgin olive oil, plus 1 tablespoon for the pan
- sea salt and black pepper, to taste
- 260g steaks of Greenland halibut
- Eggplant, asparagus and cherry tomatoes, to taste
- 1 tablespoon butter
Instructions
- In a shallow dish, mix garlic, lemon juice, wine, and olive oil. Add halibut steaks, turning to coat, and marinate for 20-30 minutes.
- Heat 1 tablespoon of olive oil in a non-stick skillet over medium heat.
- Remove halibut from the marinade, season with salt and pepper, and cook in the skillet until golden, about 3-5 minutes per side.
- Add butter to the pan, let it melt, and spoon over the fish.
- Sauté the sliced eggplant, asparagus, and cherry tomatoes in the remaining oil, then serve alongside the halibut. Optionally, garnish with lemon and tartare sauce.
