Coto Makassar


This is a type of beef soup in a different way. The beef tripe is cooked with lemon grass, bruised galangal, palm sugar, salt, roasted peanut, and water.

Ingredients:

  1. 500 g beef
  2. 500 g beef tripe
  3. 2 stalks lemon grass, take only the white part, bruised
  4. 2 inch galangal, bruised
  5. 1 tbsp. salt
  6. 1 tsp palm sugar
  7. 2 L water
  8. 100 g peanut, roasted and ground coarsely
  9. 5 tbsp. cooking oil
Blend into paste
  1. 10 cloves garlic
  2. 5 shallots
  3. 4 red chillies
  4. 4 Thai chillies
  5. 4 pcs candlenuts
  6. 2 tbsp. tauco (fermented soy beans)
  7. 4 tbsp. coriander powder
  8. 1 tbsp. black pepper powder
