"A lovely nose is notably mature with plenty of yeast character adding interest to the ripe pear compote and citrus nuances. There is a lovely sense of energy to the lively flavors where the supporting mousse is relatively firm if not particularly fine while the pronounced yeastiness announced by the nose is also very much present, all wrapped in a moderately dry, beautifully complex and lingering finish. This is a full-bodied and full-flavored effort, indeed the word bold would be apt here. This will most appeal to those who enjoy robust Champagne as there isn't much elegance but I do admire the frank delivery plus it's clear that the word Réserve on the label isn't just marketing as the complexity is definitely on the superior side."

Billecart Salmon Brut Reserve NV (France)
Billecart Salmon is one of the world's finest non-vintage champagnes. Billecart-Salmon has hit a purple patch of form - so much so that champagne 'guru' Tyson Stelzer recently rated the producer 10/10 in his influential Champagne Guide. He quite rightly points out that the Brut Reserve sets the phenomenally high standard by which all the other Billecart-Salmon wines follow. The quality is unquestionable, and the price is exceptional for quality non-vintage champagne.
Moet & Chandon Brut Imperial NV (France)
Established on 1743, Moet & Chandon was the first champagne house and to this day the world's best selling champagne. Moet Imperial is the House's iconic champagne. Created in 1869, it embodies the unique Moet & Chandon style of being vibrant, generous and alluring. The nose is delicately vinous, with an initial aroma of both lime and vine blossom. The palate shows predominantly Pinot characteristics. Light, persistent sparkle. Very ample in the mouth, with a discreet finish. Champagne guru Tyson Stelzer is suitably impressed with recent bottlings, noting that "this is the freshest and most fruit-focused I have seen it." He sums it up by declaring that this is "better-made than ever". The tradition continues.
Ayala Brut Majeur NV Champagne (France)
Owned by Bollinger since 2005, Champagne AYALA is one of the longest-established champagne Houses; it has been based in Aÿ, at the heart of the great champagne vineyards, since it was founded over 150 years ago. Independent and family-owned, it is still today the archetype of a great and historic House, producing top quality wines which are enjoyed throughout the world for their freshness and elegance.
The NV Brut Majeur shows lovely balance in an approachable, up-front style well-suited to near-term drinking. Clean, mineral notes add a sense of proportion on the fresh, vibrant finish. The blend is 45% Pinot Noir, 35% Chardonnay and 20% Pinot Meunier, 80% of which is from the 2004 vintage, while the rest of the wine is composed of Pinot Noir and Chardonnay reserve wines. Disgorged January, 2010. Anticipated maturity: 2010-2014.
