什麼是牛里脊肉?
牛里脊肉是胴體的很大一部分,從第 13 肋一直延伸到髖骨,從脊椎骨一直延伸到側面(或腹部)。
完整的牛腩本身又細分為上牛腩和底牛腩。頂級牛腰肉通常被製成適合燒烤的牛排。
與上層牛腩分離後,下層牛腩通常分為三個主要部分:三尖、球尖和襟翼,它們適合烘烤和燒烤(有時還製成碎牛肉)。
里脊肉的後端,也就是牛里脊肉,也位於牛腰肉內,要么在製作整個里脊肉時將其完全去除,要么後端用作烤肉。
