豬里脊肉是一種相對較瘦的肉，這意味著它比豬肩肉含有更少的脂肪。雖然它是最瘦的豬肉，但也是最嫩的。豬里脊肉最常見的形式是豬排，不過一整塊豬里脊肉可以變成美味多汁的烤豬肉。
豬的腰部特別長，因此它們最多可以有 17 根肋骨，而牛肉和羊肉有 13 根肋骨。整個豬腰肉可以烤，也可以切成單獨的排骨或肉片。里脊肉取自豬腰肉的後部，後肋骨取自腰部的上胸腔區域。腰部上方是另一段肥肉，可用於製作豬油、咸豬肉，或添加到香腸或豬肉末中。

尺寸：豬里脊是一大塊肉，所以你可以把它切成薄片。
質地和味道：相當瘦，味道溫和的肉，上面有一層厚厚的脂肪；如果煮得好，會很嫩。
烹飪方式：豬里脊肉最好用中火烤製，或先烤熟，然後在烤箱中慢烤。小心不要把豬腰肉煮過頭。
