什麼是豬里脊肉?解構不同豬肉部位

豬肉可以飼養出更長的里脊肉,可以多達17根肋骨,而牛肉和羊肉則只有13根。整塊豬里脊肉可以燒烤或者切成排骨或肉排。
豬里脊肉是最瘦、最嫩的部位。請小心避免將里脊肉過度烹煮。里脊肉的三個部分是:
- 最靠近肩膀的部分,往往脂肪較多
- 最靠近臀部的部分,往往帶骨頭
- 中央部分是最瘦最嫩的部分
烤豬里脊是通過將兩個上腰肉綁在一起,脂肪面朝外而製成的。
豬里脊排是幾種不同的切塊,均可以稱為豬排。所有的烤、烤或煎都很棒。請注意,帶骨頭而較厚的豬排可以烹製出最多汁和美味的豬排。按嫩度降序排列,具體的豬排切塊是:
豬里脊肉包括豬里脊肉末排、里脊豬排、豬肉中心里脊。可以通過一側的T形骨頭來識別。

豬里脊肉排
豬排骨有時去骨出售,稱為豬排,可以像排骨一樣烹煮。
法式豬排取自豬里脊肉的肋骨部分,以Frenching法式去骨技術將肋骨保留在排骨上,以提供出色的擺盤並增加風味。 Frenching是一種從骨頭上取下所有肉的技術。
