It is been believed by the Chinese that three is the lucky number and hence they use three vegetables with beef in this dish. The beef is cooked with bok choy, red onion, and mushrooms in sherry sauce and dark soy.
Ingredients:
For the Marinade- 2 tablespoons light soy sauce
- 1 tablespoon Chinese rice wine (or Shaoxing rice wine or dry sherry)
- 1/4 teaspoon sesame oil
- 1 tablespoon cornstarch
- 1 tablespoon dark soy sauce
- 2 tablespoons light soy sauce
- 1 tablespoon sugar
- 1 tablespoon dry sherry (or rice wine)
- 1 pound flank steak (or top sirloin beef, thinly sliced)
- 4 to 5 tablespoons neutral oil (such as vegetable or canola)
- 1 clove garlic (crushed and chopped)
- 1 teaspoon fresh ginger (minced)
- 1/2 cup onion (chopped)
- 2 bok choy stalks (leaves separated, leaves and stalks cut diagonally)
- 1/2 cup fresh mushrooms (washed and thinly sliced)
- Optional: 2 green onions (sliced diagonally)
