這道菜也被稱為中式叉燒,是一道簡單但令人垂涎欲滴的菜餚。五花肉會先用生抽等調味料醃製,之後再烤至紅色。

如何準備叉燒?

材料:

  • 2條豬里脊
  • 1/2杯生抽
  • 1/3杯蜜糖
  • 1/3杯茄汁
  • 1/3杯紅糖
  • 1/4杯中國米酒
  • 2湯匙海鮮醬
  • 1/2茶匙紅色食用色素(可選)
  • 1茶匙五香粉(可選)

製作說明:

  1. 豬肉沿紋切成1.5至2英寸長的條狀,放入可密封的大塑膠袋中
  2. 在小鍋中混合生抽、蜜糖、茄汁、紅糖、米酒、海鮮醬、紅色食用色素或紅腐乳(見廚師提示)和五香粉,用中小火煮至稍微溫熱並均勻攪拌,約2至3分鐘。將醃料倒入塑膠袋中,擠出袋中空氣,並封好袋口。翻動幾次袋子,讓所有豬肉條均勻裹上醃料
  3. 將豬肉放入冰箱醃製2小時至過夜
  4. 預熱戶外烤架至中高火,輕輕在烤架上刷油
  5. 從醃料中取出豬肉,輕輕抖掉多餘的液體,剩餘的醃料可丟棄
  6. 將豬肉放在預熱的烤架上烤20分鐘。放一小容器的水在烤架上,繼續烤豬肉並定期翻面,直至完全熟透,約需1小時。插入中心的即時溫度計應顯示至少63度C
