蒜乾排骨食譜

這是蒙特利爾的特色菜,現在在香港的許多餐館都有售。排骨在干大蒜和其他香草的醬汁中燉煮。
材料
製作說明
- 將一大鍋水煮沸,加入排骨,蓋上鍋蓋,小火煨煮30分鐘至軟嫩
- 在煨排骨時,將紅糖、水、大蒜、生抽和乾芥末粉放入小碗中混合
- 將排骨從鍋中取出,沿骨頭切開肉塊(可保留豬肉湯作他用)。清洗鍋子
- 將醬汁材料倒入鍋中並煮沸,加入排骨,再次煮沸後轉小火煨煮10至15分鐘,經常澆淋醬汁在排骨上
- 將排骨放入上菜盤中。將醬汁回鍋煮至濃稠,淋在排骨上即可食用
