2 包新西蘭優質草飼超瘦牛肉碎(~85% VL,500 克)
1公斤新土豆,四分之一
3 湯匙 橄欖油,加上額外的毛毛雨
2 個洋蔥,磨碎
3根胡蘿蔔,磨碎
2根芹菜條,切碎
4 湯匙 麵粉
550毫升牛肉高湯
3 湯匙 伍斯特沙司
一把切碎的新鮮平葉歐芹
方法:
1. 將烤箱加熱至 200°C/180°C 風扇/燃氣 6. 將土豆鋪在大烤盤上,加入 2 湯匙橄欖油、鹽和胡椒粉,然後放在烤箱的高架上烤25-30 分鐘直至呈金黃色。
2. 同時,在耐熱砂鍋中加熱剩餘的油,然後將洋蔥與胡蘿蔔、芹菜和牛肉碎一起炒 5 分鐘至褐色。加入麵粉,然後加入高湯和伍斯特沙司。在烤箱的中間架子上不加蓋地烹飪 15-20 分鐘。
3. 從烤箱中取出土豆和肉末混合物。將土豆和歐芹一起攪拌,撒在肉末上即可食用。
牛肉碎和餡餅食譜

材料:
- 1kg beef mince
- 1kg new potatoes, quartered
- 3 tbsp olive oil, plus extra to drizzle
- 2 onions, grated
- 3 carrots, grated
- 2 celery sticks, finely chopped
- 4 tbsp flour
- 550ml beef stock
- 3 tbsp Worcestershire sauce
- Handful chopped fresh flatleaf parsley

- Heat the oven to 200°C/180°C fan/gas 6. Spread the potatoes over a large baking sheet, toss with 2 tbsp of the olive oil, salt & pepper, then roast on a high shelf in the oven for 25-30 minutes until golden.
- Meanwhile, heat the remaining oil in an ovenproof casserole dish, then fry the onions with the carrots, celery & beef mince for 5 minutes to brown. Stir in the flour, then the stock & Worcestershire sauce. Cook, uncovered, on a middle shelf in the oven for 15-20 minutes.
- Remove the potatoes and the mince mix from the oven. Toss the potatoes with the parsley, scatter over the mince & serve.
