材料
- 1磅牛肉三角肉、牛排腰肉或肋眼肉,切成1/8英寸薄片
- 4根青蔥或1根葱(日本大蔥),切斜切成2英寸長的段
- 12盎司新鮮蘑菇(可以使用香菇、金針菇、褐菇、杏鮑菇等多種)
- 7盎司伊藤蒟蒻麵條、絲瓜、山藥或透明麵條(如果需要,先煮熟並沖洗瀝乾)

製作說明
- 在一個4 1/2至5夸脫的鍋中(最好使用琺瑯鑄鐵鍋,但也可以使用你現有的鍋具),中火加熱鍋,加入牛脂修剪。將牛脂渣煎出(如果使用),約1分鐘後,加入牛肉片。儘量將牛肉片鋪成單層,將每一面煎至金棕色。
- 將牛肉集中到鍋的一邊,將小紅蔥、洋蔥、南京白菜、青蔥、蘑菇、豆腐和蒟蒻麵條有序地放入鍋中,分成整齊的小堆。加入清酒、高湯或水、糖和醬油,然後將湯燉煮10分鐘。
- 將春菊、菠菜或芝麻菜葉鋪在所有食材上,再煮1分鐘。將料理直接從鍋中端上桌。其中一種享用這道鍋物的方式是,為每個人打散一顆蛋,將其放在碗中。他們在享用時,可以將每一樣熟食材料浸入蛋液中,然後食用。將鍋中的所有食材吃完後,再將剩餘的湯倒入碗中,與米飯一起享用,將美味的湯底完全吃完。
