如何準備燉牛里脊肉?

原料:

2 x 新西蘭優質草飼牛里脊肉丁 (350 克)
2湯匙無鹽黃油
1湯匙橄欖油
1 1⁄2 杯土豆丁,沖洗乾淨(1/2 英寸)
1 杯小胡蘿蔔
1 杯小白蘑菇
1⁄3 杯切碎的洋蔥
1湯匙切碎的大蒜
1/2 杯新鮮嬰兒綠豌豆(或冷凍)
1/2茶匙鹽
1/4 茶匙新鮮胡椒粉
2湯匙幹白葡萄酒
2湯匙雞湯

方法:

1. 在一個大的不粘鍋中加熱 1 湯匙黃油和油——加入土豆、胡蘿蔔和蘑菇。
2. 部分覆蓋並偶爾攪拌 8 分鐘或直到蔬菜被刺穿變軟並呈淺褐色。
3.加入洋蔥;煮 1 到 2 分鐘。
4.加入大蒜、豌豆和1/4茶匙鹽;煮 1 分鐘直到散發出香味 - 蓋上蓋子並放在一邊。
5. 在另一個大的不粘鍋中用中高溫加熱剩餘的黃油,直到非常熱並起泡。
6. 在肉上撒上剩餘的 1/4 茶匙鹽和胡椒粉;加入煎鍋並煮 2 至 4 分鐘,將肉翻至各面都變成褐色。
7.添加到蔬菜中;攪拌混合-轉移到盤子裡。
8. 將酒和肉湯加入煎鍋中煮沸 10 秒-倒入燉菜即可食用。

材料:

  • 700g Beef Tenderloin diced
  • 2 tablespoons unsalted butter
  • 1 tablespoon olive oil
  • 1 1⁄2 cups diced potatoes, rinsed (1/2 inch)
  • 1 cup baby carrots
  • 1 cup small white button mushrooms
  • 1⁄3 cup chopped onion
  • 1 tablespoon chopped garlic
  • 1/2 cup fresh baby green pea (or frozen)
  • 1/2 teaspoon salt
  • 1/4 teaspoon fresh ground pepper
  • 2 tablespoons dry white wine
  • 2 tablespoons chicken broth

製作說明:

  1. Heat 1 tablespoon butter & the oil in a large nonstick skillet- Add potatoes, carrots & mushrooms.
  2. Cook, partially covered & stirring occasionally, for 8 minutes or until vegetables are soft when pierced & lightly browned.
  3. Add onion, and cook for 1 to 2 minutes.
  4. Add garlic, peas & 1/4 teaspoon salt, and cook 1 minute until fragrant- Cover & set aside.
  5. Heat remaining butter in another large nonstick skillet over medium-high heat until very hot & foaming.
  6. Sprinkle meat with remaining 1/4 teaspoon salt & pepper, and add to skillet & cook 2 to 4 minutes, turning meat until browned on all sides.
  7. Add to vegetables, and stir to mix- Transfer to a platter.
  8. Add wine & broth to skillet & boil 10 seconds- Pour over stew & serve.
