如何用芳香蔬菜烹製紅燒法式鴨腿?

鹽和胡椒粉調味
2個大洋蔥
1磅胡蘿蔔
6根芹菜桿
2 杯雞湯,最好是自製的

方法:

1. 將鴨腿,帶皮的一面朝下,放入一個足夠容納所有食材的煎鍋/平底鍋中;把熱量調到中等。將烤箱加熱至 400 度。棕色鴨腿仔細均勻,在烹飪時撒上鹽和胡椒粉。同時,將蔬菜去皮切丁。
2. 當腿變成漂亮的棕色時,將它們翻過來烤一兩分鐘。移到盤子裡;去除所有的脂肪,只留下足以潤濕蔬菜的脂肪。將蔬菜連同一些鹽和胡椒一起放入煎鍋中。用中高火煮 10 到 15 分鐘,偶爾攪拌,直到它們開始變成褐色。將鴨腿放回鍋中,帶皮的一面朝上,並加入高湯;它應該到達鴨腿的一半,但不應覆蓋它們。將熱量調高,煮沸,然後轉移到烤箱。
