如何準備烤小排骨?

- 在烤架上生火,留一側不放炭火。當炭火表面覆蓋一層灰白色的灰燼,且溫度達中火(你可以將手掌放在炭火上方約5英吋,能夠保持5到7秒不覺得太熱),就可以開始烹調。(如果使用瓦斯烤架,先將所有火爐調至高火,蓋上蓋子加熱15分鐘,然後將火調至中火。)
- 同時,將燒烤醬與1杯水混合攪拌均勻,備用。
- 將排骨均勻撒上大量鹽和黑胡椒,放在炭火正上方直接烤,烤25到30分鐘,每5分鐘左右翻面一次,並用稀釋的燒烤醬塗抹,直到從肉中間切開檢查,肉已完全不帶粉紅色。
- 將整塊排骨從烤架取下,切成單根排骨,然後上桌享用。
