材料

  • 2 隻龍蝦尾
  • 1/4 杯融化奶油
  • 1 湯匙檸檬汁
  • 1/2 茶匙檸檬皮屑
  • 2 湯匙新鮮切片細香蔥,另可備些許作裝飾用
  • 2 湯匙新鮮切碎的歐芹,另可備些許作裝飾用
  • 1 瓣大蒜,切碎
  • 1/4 茶匙猶太鹽,另可依口味調整
  • 特級初榨橄欖油(用於刷塗)
  • 現磨黑胡椒,適量
  • 一小撮紅辣椒碎
  • 檸檬角,搭配食用

製作說明

  1. 預熱烤架或烤盤至中火。在小碗中混合融化奶油、檸檬汁、檸檬皮屑、細香蔥、歐芹、大蒜和鹽,攪拌均勻備用。
  2. 使用廚房剪刀,從龍蝦尾殼的上方剪開至肉質部分。接著用刀沿著中線將肉劃開至一半深(不要切斷)。在龍蝦肉中間插入一根竹籤,以防烹煮時龍蝦尾捲曲。
  3. 全身刷上橄欖油,並用鹽與黑胡椒調味。將龍蝦肉面朝下放上烤架,烤至表面略帶焦痕,約 6 分鐘。翻面後,在肉面上舀上一勺奶油混合醬,再烤約 5 分鐘,直到龍蝦完全熟透。
  4. 從烤架取出龍蝦,灑上紅辣椒碎。搭配檸檬角一起享用。
