材料
- 1 隻全雞(1.2-1.6 公斤)或 600-800 公克雞肉
製作說明
- 在大鍋中放入雞肉、薑片、半份蒜和鹽。倒入清水,確保雞肉完全浸沒。
- 用大火將鍋子燒開。沸騰後轉小火,蓋上鍋蓋,小火燉煮 30-40 分鐘,直到雞肉熟透變軟。
- 小心地將煮熟的雞肉移到砧板或盤子上。讓雞肉稍微冷卻,約 10 分鐘。
- 用細網篩過濾煮雞水,丟掉固體。將過濾後的液體倒回鍋中,加入蒲丹香葉,以小火慢燉浸泡 5-10 分鐘。您亦可以使用部分煮雞水準備蒸米飯。
- 雞肉冷卻到可以處理後,用手指輕輕地將肉從骨頭上切下來。盡量將雞肉切成一口大小的塊狀。
- 上菜時,將雞肉放在盤子上。在雞肉上淋上一些熱的煮雞水。您可以搭配蒸米飯和由醬油、青檸汁、辣椒油、大蒜和薑蓉製成的蘸醬享用。
