材料:

  • 2 包 歐洲有機什錦蔬菜(400 克)
  • 1½ 杯 地瓜(去皮並切塊)
  • 1 杯 洋蔥(切片)
  • 2 瓣 大蒜(切碎)
  • 1½ 湯匙 紅椒粉
  • 1 茶匙 孜然粉
  • ½ 茶匙 北非綜合香料(Ras el Hanout)
  • ½ 茶匙 黑胡椒
  • 4 湯匙 橄欖油
  • ⅔ 杯 蔬菜高湯
  • 1.333 杯 小番茄(如有需要可對切)

製作說明:

  1. 將蒜末、香料與橄欖油拌勻。
  2. 加入蔬菜(小番茄除外)拌炒,並在塔吉鍋中將所有蔬菜四面煎香。
  3. 倒入蔬菜高湯,加蓋後用中火燜煮約 20 分鐘。
  4. 加入小番茄,續煮 5 至 10 分鐘。
  5. 依個人口味調味,撒上香菜後立即上桌享用。
