無激素法國無骨連皮番鴨胸
材料
製作說明
- 將鴨胸的皮劃上每 2 公分的間隔,然後用海鹽和黑胡椒調味。
- 將鴨胸皮朝下放入冷的不粘煎鍋中,然後開中高火加熱。煎 8 分鐘,期間不翻動,直到鴨胸的脂肪充分釋放,皮膚變得金黃酥脆。
- 同時,將姜和大蒜去皮並切成細片,將紅辣椒切成細片。將蘆筍的木質根部折斷。
- 將鴨胸翻面,再煎 4 分鐘,然後取出放在盤子上靜置,將鴨油保留在鍋中。
- 將切好的姜、大蒜和辣椒撒入熱鍋中,繼續煮 3 到 5 分鐘,或直到變脆,並定期攪拌。同期,將青江菜和蘆筍焯水或蒸 2 分鐘。
- 在小碗中混合醬油和米醋製作調味汁,並加入鴨肉靜置時的滴汁。
- 將煮熟的蔬菜對半切開,並擺放在盤子上。將鴨胸切成薄片,斜切後擺在蔬菜上方。淋上調味汁,撒上脆皮姜、大蒜和辣椒,即可完成。
