- 將 6 湯匙橄欖油、大蒜、羅勒、鹽、胡椒和檸檬汁放入一個大型可密封塑料袋中。加入魚柳,封口後搖晃,讓魚柳均勻裹上醃料。放入冰箱冷藏至少 30 分鐘,最長可達 2 小時。
- 在一個大型平底鍋中(不要使用有紋路的鍋),倒入輕型橄欖油或植物油,並將鍋傾斜使油均勻分佈。將鍋加熱至高火,直到油開始冒煙,然後加入魚柳。用醃料刷魚的上面和兩側。煎約 3 分鐘,直到魚柳表面變色,然後翻面繼續煎約 3 分鐘。再次用醃料刷魚的上面和兩側。將火力調至中火,繼續煮至魚柳中心剛變不透明,根據魚柳厚度,每面再煎 2 到 4 分鐘,並繼續像之前一樣用醃料刷魚。如果需要,可用香菜裝飾,然後上桌。
