菠蘿蜜汁火腿食譜

1 隻去骨火腿(2-2.5 公斤

1 菠蘿

1/2 杯紅糖

1/4 杯第戎芥末醬

1 湯匙喼汁

1 茶匙肉桂粉

1/2 茶匙丁香粉

做法說明

將烤箱預熱至華氏 325 度(165 攝氏度)。

將火腿放在大烤盤的烤架上

在小平底鍋中加入菠蘿汁、紅糖、芥末醬、喼汁、肉桂粉和丁香粉以中火加熱混合物,不時攪拌,直到糖溶解,蜜汁略微變稠糖漿

在火腿表面刷上適量的菠蘿蜜汁,確保火腿表面充分沾上蜜汁保留一些菠蘿蜜汁,以便在烹飪時淋在火腿上

用鋁箔鬆鬆地蓋住火腿,放入預熱好的烤箱每磅烤約 15 分鐘,直到內部溫度達到 140°F (60°C)。 在烹調過程中,每隔 30 分鐘給火腿澆一次剩餘的蜜汁糖漿

在火腿烤好前約 15-20 分鐘,取下鋁箔,將烤箱溫度升至 220°C (425°F)。 這將有助於使蜜汁焦糖化,形成漂亮的金黃色外皮

一旦火腿達到所需的內部溫度,表面上好後,將其從烤箱中取出,靜置約 10-15 分鐘後再切片

您也可以用菠蘿片和馬拉希諾櫻桃裝飾火腿,增添節日氣氛用牙籤固定菠蘿片,在每個菠蘿圈的中心放一顆櫻桃

將火腿切片,趁熱食用,並用剩餘的蜜汁漿作為醬汁

                    材料

                    • 1 boneless gammon ham (2-2.5 kg)
                    • 1 cup pineapple juice
                    • 1/2 cup brown sugar
                    • 1/4 cup Dijon mustard
                    • 1 tablespoon Worcestershire sauce
                    • 1 teaspoon ground cinnamon
                    • 1/2 teaspoon ground cloves
                    • Pineapple slices and maraschino cherries for garnish (optional)

                    製作說明

                    1. Preheat your oven to 325°F (165°C).
                    2. Place the boneless gammon ham on a roasting rack in a large baking pan.
                    3. In a small saucepan, combine pineapple juice, brown sugar, Dijon mustard, Worcestershire sauce, ground cinnamon, and ground cloves.
                    4. Heat the mixture over medium heat, stirring occasionally, until the sugar has dissolved and the glaze has thickened slightly.
                    5. Brush a generous amount of the pineapple glaze over the surface of the gammon ham, ensuring it is well coated. Reserve some of the glaze for basting during cooking.
                    6. Cover the ham loosely with aluminum foil and place it in the preheated oven. Bake for about 15 minutes per pound, or until the internal temperature reaches 140°F (60°C). Baste the ham with the remaining glaze every 30 minutes during cooking.
                    7. About 15-20 minutes before the ham is done, remove the aluminum foil and increase the oven temperature to 425°F (220°C). This will help caramelize the glaze and create a beautiful golden crust.
                    8. Once the ham reaches the desired internal temperature and has a nicely glazed surface, remove it from the oven and let it rest for about 10-15 minutes before slicing.
                    9. Optionally, you can garnish the ham with pineapple slices and maraschino cherries for a festive touch. Secure the pineapple slices with toothpicks and place a cherry in the center of each pineapple ring.
                    10. Slice the ham and serve it warm, accompanied by the remaining glaze as a sauce.
