做法說明:

- 1 boneless gammon ham (2-2.5 kg)
- 1 cup pineapple juice
- 1/2 cup brown sugar
- 1/4 cup Dijon mustard
- 1 tablespoon Worcestershire sauce
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground cloves
- Pineapple slices and maraschino cherries for garnish (optional)

- Preheat your oven to 325°F (165°C).
- Place the boneless gammon ham on a roasting rack in a large baking pan.
- In a small saucepan, combine pineapple juice, brown sugar, Dijon mustard, Worcestershire sauce, ground cinnamon, and ground cloves.
- Heat the mixture over medium heat, stirring occasionally, until the sugar has dissolved and the glaze has thickened slightly.
- Brush a generous amount of the pineapple glaze over the surface of the gammon ham, ensuring it is well coated. Reserve some of the glaze for basting during cooking.
- Cover the ham loosely with aluminum foil and place it in the preheated oven. Bake for about 15 minutes per pound, or until the internal temperature reaches 140°F (60°C). Baste the ham with the remaining glaze every 30 minutes during cooking.
- About 15-20 minutes before the ham is done, remove the aluminum foil and increase the oven temperature to 425°F (220°C). This will help caramelize the glaze and create a beautiful golden crust.
- Once the ham reaches the desired internal temperature and has a nicely glazed surface, remove it from the oven and let it rest for about 10-15 minutes before slicing.
- Optionally, you can garnish the ham with pineapple slices and maraschino cherries for a festive touch. Secure the pineapple slices with toothpicks and place a cherry in the center of each pineapple ring.
- Slice the ham and serve it warm, accompanied by the remaining glaze as a sauce.
