材料
- 1 湯匙麵粉(僅適用於使用奶油代替乳脂奶油的情況)
製作說明
- 用海鹽為豬排調味。
- 在鑄鐵或不銹鋼平底鍋中加熱一湯匙橄欖油。 將豬排每面煎至不超過 2 分鐘。 取出豬肉,放在一個單獨的盤子裡。
- 在同一鍋中加入切碎的香蔥。 用中火烹煮,不斷攪拌,約 3 分鐘。 然後加入切碎的蘑菇和迷迭香,繼續煮 5 分鐘。
- 將香蔥和蘑菇汁蒸發,鍋乾後,加入一小匙干邑,同時用木匙刮去焦屑。 如果用奶油代替乳脂奶油,則撒入麵粉並攪拌均勻。
- 在鍋中加入高湯、全麥芥末和奶油。 攪拌均勻。
- 將豬排放回鍋中。 將混合物煮沸,然後轉小火慢燉 2 分鐘。 將鍋子離火。
