材料
紅酒醬材料
- 1 茶匙 新鮮迷迭香(使用 1/4 茶匙乾燥迷迭香亦可)
製作說明
烹調羊架
- 將烤箱預熱至 200 度。
- 將鹽與黑胡椒均勻抹在羊排上醃製入味。
- 中高火加熱平底鍋,倒入橄欖油。
- 將羊架放入鍋中,肉面朝下煎。
- 將羊架所有面煎至上色、表面呈金黃褐色。
- 將整個鍋子轉入預熱好的烤箱中,烘烤 30–40 分鐘。
- 取出羊排,靜置片刻讓肉汁回流。
準備紅酒醬汁
- 使用煎羊排後的原鍋與鍋內肉汁,加入切碎洋蔥、牛高湯與紅酒。煮滾後轉中火繼續煮並攪拌幾分鐘。
- 加入細香蔥、百里香與奶油。
- 以鹽和黑胡椒調味醬汁。
- 即可搭配羊排享用紅酒醬汁。
