材料
- 1 隻整塊豬肩(4公斤),連骨並已劃開表皮(見註)
製作說明
- 將已劃皮的豬肩肉放入冰箱冷藏並不加蓋,靜置一晚以風乾表皮。烹調前一小時取出回溫。
- 將烤箱預熱至190°C。使用研缽將野茴香、檸檬皮屑、迷迭香及蒜頭搗成糊狀,加入橄欖油拌勻,然後將醃料塗抹於豬肉的內部(避開豬皮),撒上適量鹽巴調味,蓋上乾淨的茶巾靜置45分鐘。
- 將切好的西芹、紅蘿蔔與洋蔥鋪在烤盤上,再將豬肩肉放於其上。用1湯匙橄欖油塗抹豬皮表面,並均勻灑上細海鹽(約15克,不用擔心鹽太多,這有助於形成脆皮,之後可以刷掉)。將烤箱溫度降至180°C,烘烤1小時後,將三分之一的紅酒倒入烤盤,再將溫度降至165°C繼續烘烤,同時分次加入紅酒(如需亦可加水),確保烤盤底部始終有液體,以保持豬肉濕潤並煮出美味醬汁。烘烤至肉質極為軟嫩、可輕易脫骨,且表皮酥脆(約需4小時)。
- 將豬肉取出靜置30至40分鐘。轉移至砧板上時建議戴上廚房手套以便安全提起,接著刷去多餘的鹽粒。將烤盤中的汁液過濾倒入鍋中,撇去浮油後試味,如味道過濃可加水稀釋,或繼續熬煮濃縮風味。搭配豬肉一起享用。
