製作說明
- 預熱焗爐至攝氏232度(華氏450度)。
- 將牛骨髓直立放置於烤盤中。如果牛骨一端明顯較寬,請將寬的一端朝下擺放,使其盡可能穩固。
- 將烤盤放入焗爐,烤焗約15至20分鐘。15分鐘後檢查骨髓,應該呈現加熱後柔軟、像啫喱般的狀態,但不應變成液體。如果尚未達到理想狀態,可再烤焗5分鐘,但切勿過度烹調,否則脂肪會融化並從骨中流失。
- 將橄欖油與檸檬汁淋在香芹沙律上。
- 將烤好的牛骨髓連同多士、香芹沙律以及一小撮灰海鹽一併上碟享用。
