材料

  • 2 根歐盟頂級黑安格斯牛骨髓
  • 1 杯新鮮香芹葉
  • 2 顆小紅蔥頭,去皮並切薄片
  • 2 茶匙酸豆
  • 脆皮麵包
  • 2 湯匙橄欖油
  • 1 湯匙新鮮檸檬汁
  • 灰海鹽(上桌用)

製作說明

  1. 預熱焗爐至攝氏232度(華氏450度)。
  2. 將牛骨髓直立放置於烤盤中。如果牛骨一端明顯較寬,請將寬的一端朝下擺放,使其盡可能穩固。
  3. 將烤盤放入焗爐,烤焗約15至20分鐘。15分鐘後檢查骨髓,應該呈現加熱後柔軟、像啫喱般的狀態,但不應變成液體。如果尚未達到理想狀態,可再烤焗5分鐘,但切勿過度烹調,否則脂肪會融化並從骨中流失。
  4. 將橄欖油與檸檬汁淋在香芹沙律上。
  5. 將烤好的牛骨髓連同多士、香芹沙律以及一小撮灰海鹽一併上碟享用。
