烤安康魚佐檸檬香芹醬食譜

- 將烤箱預熱至 220°C/風扇模式 200°C/瓦斯爐 7 檔。將安康魚魚柳拆開,用廚房紙巾擦乾表面。輕輕地在魚柳上抹上一些鹽與黑胡椒。
- 將可進烤箱的平底鍋放在中大火加熱 2 分鐘,然後放入安康魚。煎約 2 分鐘至魚身微微上色,再小心翻面,續煎 2 分鐘。之後將整個鍋子轉入烤箱中,烘烤約 6–8 分鐘,具體時間依魚柳厚度而定。烤熟的安康魚呈不透明狀,用叉子輕壓會輕易剝落即表示熟透。
- 在烘烤安康魚的同時,準備檸檬香芹奶油醬。將檸檬表皮細刨下,並將其中一半榨汁。把香芹葉粗略切碎。
- 在小鍋中用小火融化奶油,接著加入檸檬皮屑、檸檬汁和大部分的香芹葉,拌勻後加少許鹽和黑胡椒調味。讓醬汁煮沸 1 分鐘後離火。當安康魚烤好後,從烤箱取出並淋上檸檬香芹奶油醬。最後灑上剩下的香芹作為裝飾即可上桌。
