烤羊排食譜

材料
製作說明
- 將烤箱預熱至 450°F(約 230°C),並將烤架放在烤箱中層。
- 在大碗中混合麵包粉、蒜末、迷迭香、1 茶匙鹽與 1/4 茶匙黑胡椒,加入 2 湯匙橄欖油攪拌,讓混合物稍微濕潤,備用。
- 將羊排全面撒上鹽與黑胡椒調味。在大型耐熱平底鍋中加熱 2 湯匙橄欖油,使用大火將羊排每一面煎約 1 至 2 分鐘至上色,然後取出稍微放涼。用刷子在羊排表面塗上第戎芥末醬,再將其均勻地沾裹上麵包粉混合物。可用鋁箔包住骨頭末端,以防烤焦。
- 將羊排骨頭朝下放回鍋中,放入預熱好的烤箱中烘烤約 12 至 18 分鐘,依您想要的熟度而定。可在烤約 10 至 12 分鐘後,用肉類溫度計量測中心溫度,依照個人喜好決定是否提早取出或繼續烘烤。烤好後,讓羊排靜置 5 至 7 分鐘,再切開肋骨之間的部分享用。靜置期間建議用鋁箔輕蓋以保溫。
- 請注意,內部溫度應比您理想的熟度低 5 至 10°F,因為在靜置時肉仍會繼續加熱。三分熟(偏生):115 至 125°F(約 46 至 52°C), 三分熟:125 至 130°F(約 52 至 54°C), 五分熟:130 至 140°F(約 54 至 60°C), 七分熟:140 至 150°F(約 60 至 66°C)
