迷迭香紅酒燉羊膝食譜

製作說明
- 將羊膝均勻灑上鹽和黑胡椒調味。在大型厚底鍋或鑄鐵鍋中加熱橄欖油,以中大火加熱。分批將羊膝放入鍋中,每面煎至金黃色,約需 8 分鐘,然後取出放在盤中備用。
- 將洋蔥、紅蘿蔔與大蒜加入鍋中翻炒,炒至金黃上色,約需 10 分鐘。加入紅酒、番茄(連汁)、雞高湯與牛高湯,拌勻。加入迷迭香與百里香調味。將羊膝放回鍋中,壓入湯汁中使其浸泡。煮滾後轉中小火,蓋上鍋蓋,燉煮約 2 小時,直到羊肉變得軟嫩。
- 打開鍋蓋,再繼續燉煮約 20 分鐘。將羊膝取出放入大盤中,置入溫熱的烤箱中保溫。將鍋中的湯汁轉大火煮滾,收汁至濃稠,約需 15 分鐘。將濃縮的醬汁淋在羊膝上即可上桌。
