慢燒羊肩肉配自製哈里薩醬食譜

- 在香料研磨器中,將番茴香、香菜和孜然種子研磨成細粉。將安喬辣椒放入微波安全碗中,加入水,並以高功率微波加熱 2 分鐘。稍微放涼後,將軟化的辣椒和 2 湯匙浸泡液轉移到攪拌機中。加入研磨香料、辣椒粉、檸檬汁、2 瓣大蒜、2 湯匙橄欖油和 1 湯匙鹽。將哈里薩醬攪拌至光滑。
- 將羊肉放入中型烤盤中,將 1/2 杯哈里薩醬均勻塗抹在肉上,靜置 2 小時在室溫下,或放入冰箱過夜。
- 將烤箱預熱至 325°F(約 162°C)。在烤盤中加入 1/2 杯水,並用鋁箔紙鬆散地蓋住烤盤。將羊肉烤 2 1/2 小時,每隔一段時間加入水以防止燒焦。取下鋁箔,繼續烤大約 2 1/2 小時,直到羊肉表面變成金棕色且非常嫩,偶爾將鍋中的汁液淋在羊肉上。取出後靜置 20 分鐘。
- 同時,在小碗中,將酸奶、香菜、壓成糊狀的大蒜和剩餘的 2 湯匙橄欖油混合。根據口味加入鹽和胡椒調味。
- 使用叉子或夾子,將羊肉從骨頭上撕下,分成大塊。用手將肉撕成更小的絲,並搭配酸奶醬、萊姆葉、印度烤餅和剩餘的哈里薩醬一起上桌。
