- 將西冷牛排的皮和背部脂肪去除,然後修剪掉其他的組織或脂肪,使牛肉看起來像一塊「乾淨」的菲力牛排,保留不超過 1 公分(1/2 吋)的脂肪。將牛肉放入一個較深、不會與食材反應的、比較緊密的容器中。
- 將除了花生油外的所有其他材料與 4 湯匙冷水一起攪拌均勻。將這些調味料倒入牛肉上,翻動以充分塗抹。蓋上容器並放入冰箱冷藏 6-24 小時,每隔幾小時翻動一次牛肉,或者當你記得時翻動,這兩者常常不是同一回事。
- 當準備開始烹煮牛肉時,將烤箱預熱至 220°C / 燃氣 7 / 風扇烤箱 200°C。從醃料中取出牛肉,用廚房紙巾盡可能將牛肉擦乾。將大煎鍋加熱至高火,並在加熱時用手掌將油塗抹在牛肉表面。
