- 在大平底鍋中加熱橄欖油與牛油至融化。將肉塊以鹽和黑胡椒調味,然後以大火煎至底部略為上色,約需1分鐘。翻轉肉塊,再煎約45秒,之後移至碟上並以鋁箔紙蓋好保溫。
- 在同一鍋中加入紅蔥頭和蒜末,以中火翻炒至香味釋出,約20秒。加入蘑菇,調味後炒約2分鐘至變軟。離火後加入干邑白蘭地,小心使用長火柴點燃。火焰熄滅後,加入芥末和鮮奶油,以中火攪拌1分鐘。接著加入小牛肉高湯、喼汁、蔥花和香芹,並以鹽、黑胡椒與辣醬調味。
- 將肉塊連同肉汁放回鍋中,翻拌使其均勻沾上醬汁。煮約1分鐘至完全加熱。將肉塊盛盤,淋上醬汁即可上桌。
