1/4 茶匙現磨黑胡椒或白胡椒碎
·
1 大匙食油
·
1 茶匙芝麻油

1 茶匙糖
製作說明:
1.
在一個大碗中,加入豆豉醬、米酒(或雪莉酒)、生粉、薑末、蒜末、胡椒粉、食油、芝麻油和糖。 攪拌均勻,製成醃料。
2.
將排骨放入碗中,攪拌均勻,使排骨均勻沾上醃料。
3.
將醃製好的排骨和醬汁倒入可放入蒸籠的耐熱淺平底鍋中。
4.
將蒸架放在炒鍋內,注入清水,差不多到蒸架的高度。 轉大火,將水燒開。 沸騰後,轉為中高火。
5. 小心地將裝有排骨的平底鍋放到炒鍋中的蒸架上。
中高火蒸 18-20 分鐘,直到排骨不再呈現粉紅色。 確保在整個蒸製過程中保持炒鍋中的水位。 如有需要,可添加更多的水。
6.
蒸熟後,將鍋子從蒸籠中取出。 將蒸好的豆豉排骨與您喜歡的配菜和米飯一起食用。

材料:
- 400g pork spare ribs
- 2 tablespoons black bean sauce
- 1 tablespoon Chinese rice wine or dry sherry
- 2 teaspoons cornstarch
- 1/2 teaspoon grated fresh ginger
- 2 cloves garlic, minced
- 1/4 teaspoon freshly ground black pepper or ground white pepper
- 1 tablespoon cooking oil
- 1 teaspoon sesame oil
- 1 teaspoon sugar
製作說明:
- In a large bowl, combine black bean sauce, rice wine (or sherry), cornstarch, grated ginger, minced garlic, ground pepper, cooking oil, sesame oil, and sugar. Mix well to create a marinade.
- Add the pork spare ribs to the bowl and toss well to coat the ribs evenly with the marinade.
- Transfer the marinated spare ribs and sauce into a shallow heatproof pan that can fit inside a steamer.
- Place a steaming rack inside a wok and fill it with water, almost up to the height of the rack. Turn the heat to high and bring the water to a boil. Once boiling, reduce the heat to medium-high.
- Carefully place the pan with the spare ribs onto the steaming rack in the wok. Steam the ribs on medium-high heat for 18-20 minutes, or until the ribs are no longer pink. Ensure that the water level in the wok is maintained throughout the steaming process. Add more water if needed.
- Once cooked, remove the pan from the steamer. Serve the Steamed Black Bean Pork Spare Ribs with your favourite selection of side dishes and rice.
