草莓藍莓起司蛋糕食譜

起司蛋糕
製作說明
- 將烤箱預熱至攝氏 163 度(華氏 325 度)。
- 製作餅底:在中型碗中混合餅乾碎、融化牛油、2 湯匙糖和肉桂粉。
- 在 9 吋活動底蛋糕模外圍與底部包上兩層鋁箔紙,模具內部噴上不黏噴霧。將餅底混合物壓實鋪在模具底部及約半吋高的側邊。
- 以 163°C 烘焙 10 分鐘,取出後放在網架上完全冷卻。
- 製作起司蛋糕內餡:將所有起司放入大碗中,以中速攪拌至順滑。加入糖及接下來的 3 種材料(雞蛋以外),充分攪拌均勻。然後逐顆加入雞蛋,每加一顆都需充分攪拌混合。
- 將起司蛋糕糊倒入已冷卻的餅底上。將整個蛋糕模放入淺烤盤中,加入熱水至模具側邊一半的高度。
- 以 163°C 烘焙約 1 小時 20 分鐘,或至中心輕觸時略為晃動即可。從烤箱取出後,用刀沿模具邊緣劃一圈脫模。待蛋糕回到室溫後,蓋上保鮮膜冷藏至少 8 小時。
- 製作表層配料:將莓果、糖、檸檬皮屑和檸檬汁放入小碗中混合,靜置 30 分鐘。將果醬塗在起司蛋糕表面,再鋪上浸漬過的水果混合物即可享用。
