材料:
炸福氣魚

  • 4 片福氣魚魚柳
  • 1/4 杯中筋麵粉
  • 1/3 杯粟粉
  • 2 枚雞蛋
  • 4 湯匙水
  • 1 茶匙鹽
  • 煎炸用植物油

豉汁西蘭花醬

  • 1 個西蘭花
  • 4 個乾冬菇,浸水發漲後切片
  • 2 大匙鹹豆豉
  • 2 大匙豆豉醬
  • 1 大匙醬油
  • 1/2 茶匙白糖
  • 半杯生粉漿
  • 4 瓣大蒜,切碎
  • 1 塊拇指大小的薑,切碎
  • 1 青蔥,切碎
  • 魚露或海鹽適量
  • 黑胡椒

製作說明:

  1. 將西蘭花花朵放入沸水中汆燙 2 分鐘,然後瀝乾並用冷水沖洗。放在一旁備用。
  2. 將麵粉、粟粉、雞蛋、水和鹽攪拌均勻,製成天婦羅麵糊。將魚柳裹上麵糊,放入冰箱冷藏 1 小時。
  3. 在炒鍋中倒入油燒熱,將裹上麵糊的魚柳煎至金黃色,約 3 分鐘。用紙巾擦乾。
  4. 在同一炒鍋中,用少許油炒蒜、薑和蔥 1 分鐘。
  5. 加入冬菇片、豆豉、豆豉醬、醬油和糖。煮 5 分鐘,直至黏稠。
  6. 加入生粉漿,進一步勾芡。
  7. 加入燙過的西蘭花,翻炒均勻。用魚露或鹽和胡椒調味。
  8. 在炸好的魚柳上淋上豆豉西蘭花醬即可食用。

材料:

  • 4 hoki fillets
  • 1/4 cup all-purpose flour
  • 1/3 cup cornstarch
  • 2 eggs
  • 4 tbsp water
  • 1 tsp salt
  • Vegetable oil for frying
  • 4 dried shiitake mushrooms (rehydrated and sliced)
  • 2 tbsp salted black beans
  • 2 tbsp black bean sauce
  • 1 tbsp soy sauce
  • 1/2 tsp white sugar
  • 1/2 cup cornstarch slurry
  • 4 cloves garlic, minced
  • 1 thumb-sized ginger (minced)
  • 1 shallot, minced
  • Fish sauce or sea salt to taste
  • Black pepper

製作說明:

  1. Blanch broccoli florets in boiling water for 2 minutes, then drain and rinse under cold water. Set aside.
  2. Make tempura batter by whisking together flour, cornstarch, eggs, water and salt until smooth. Coat hoki fillets in batter and refrigerate for 1 hour.
  3. In a wok, heat oil and fry battered hoki fillets until golden brown, about 3 minutes. Drain on paper towels.
  4. In the same wok, sauté garlic, ginger and shallot in a bit of oil for 1 minute.
  5. Add rehydrated shiitake, black beans, black bean sauce, soy sauce and sugar. Simmer for 5 minutes until thickened.
  6. Stir in cornstarch slurry to further thicken the sauce.
  7. Add the blanched broccoli and toss to coat. Season with fish sauce or salt and pepper.
  8. Serve the fried hoki fillets topped with the black bean broccoli sauce.
