製作說明
- 將牛排兩面均勻灑上鹽、黑胡椒、大蒜與紅辣椒碎。讓牛排在室溫下靜置 2 小時。
- 牛排靜置期間,將牛仔奶油(Cowboy Butter)所需的所有材料放入中型碗中拌勻。
- 拌勻後,將奶油放在烘焙紙上,塑形成橫向圓柱狀。將烘焙紙包裹奶油,兩端扭緊,並放入冰箱冷藏至少 15 分鐘。
- 為進行反向煎烤(reverse-sear)牛排,準備兩種加熱區域。
- 在烤架上建立兩個加熱區:一側為直接火(高溫),另一側為間接火(低溫)。
- 準備好後,將牛排放在間接火區烤。蓋上蓋子,維持溫度在 250°F(約 120°C),烤約 25 分鐘。
- 當牛排內部溫度達到 105°F(約 40°C)時,移至直接火區。
- 每一面烤 2 分鐘,讓表面煎出焦香。
- 將牛排從烤架取下,靜置 10 分鐘,再放上一片牛仔奶油。
- 搭配你喜愛的配菜一起享用。
