材料
製作說明
- 將一束綠豆粉絲放入溫水中浸泡,約 15 分鐘至變軟。修剪金針菇根部,輕輕沖洗去除雜質,並分成小束(每束約 1.5 公分寬)。將粉絲和金針菇備用。
- 煮一鍋中型水,使用小刀在每顆番茄底部劃十字,方便燙後剝皮。小心將番茄放入滾水中汆燙 30 秒,再用漏勺撈起,放涼備用。
- 將水再次煮滾,加入牛肉汆燙 15 秒,直到牛肉表面變色並浮起泡沫。撈出牛肉備用。
- 將蔥白與蔥綠分開。蔥白斜切成 2–5 公分長段,蔥綠切細。此時番茄應已放涼,去皮後切成約 2.5 公分的塊狀。
- 在湯鍋中(若有中式陶瓷湯鍋更佳),中火加熱油,放入蔥白與薑片炒香約 1–2 分鐘。
- 加入蒜末與番茄醬炒約 30 秒,直到油呈紅橘色。加入番茄、醬油、糖與香油,拌炒約 3 分鐘,讓番茄稍微煮爛。
- 加入雞高湯與清水,煮滾後蓋上鍋蓋,小火燉煮 5 至 10 分鐘。再加入金針菇與粉絲,繼續蓋鍋煮 3 至 5 分鐘。
- 拌入牛肉,加入白胡椒與鹽調味。撒上香菜與蔥綠裝飾。搭配白飯享用!
