製作說明
- 用烘焙紙或保鮮膜覆蓋豬扒,然後用擀麵棍或平底鍋將其敲打至約 1.5 公分厚,讓厚度均勻。
- 製作豬扒醃料:將魚露、大蒜、糖、薑黃粉和黑胡椒攪拌均勻。將混合醬汁倒在豬扒上,醃漬 10 分鐘。
- 製作越式魚露醬(nuoc cham):將魚露、糖、醋、青檸汁與 1/4 杯清水放入玻璃瓶中,搖晃至糖溶解。此醬汁可冷藏保存最多兩週。食用前取出適量,加入辣椒和蒜末拌勻即可。
- 在大平底不沾鍋中加熱 1 湯匙油,用大火煎豬扒,每面煎 3-4 分鐘至熟透。離火後讓豬扒靜置 2 分鐘。
- 搭配白飯、水煮蛋、番茄和小黃瓜一起享用,最後淋上充足的越式魚露醬即可上桌。
