材料
- 6 隻冷凍澳洲鮑魚 (解凍並清洗乾淨)
- 2 湯匙植物油
- 3 瓣大蒜 (剁碎)
- 1 小塊薑 (切片)
- 1 杯雞高湯
- 3 湯匙蠔油
- 1 湯匙生抽
- 1 茶匙糖
- 1 茶匙玉米澱粉 (與 2 湯匙水混合)
- 蒸熟的蔬菜 (如西蘭花或大白菜) 供食用
製作說明
- Thaw and prepare the abalone: Thaw the frozen Australian abalone completely and clean thoroughly. Pat dry with paper towels. To tenderise, lightly pound the abalone with a meat mallet or make shallow cuts on the surface.
- Sear the abalone: Heat vegetable oil in a skillet over medium heat. Add the abalone and sear for 1-2 minutes on each side. Remove from the pan and set aside.
- Prepare the sauce: In the same skillet, sauté minced garlic and ginger until fragrant, about 1-2 minutes. Add chicken stock, oyster sauce, light soy sauce, and sugar. Stir to combine.
- Simmer the abalone: Return the seared abalone to the skillet. Reduce the heat to low and let the abalone simmer in the sauce for 5-7 minutes, allowing the flavours to infuse.
- Thicken the sauce: Stir in the cornstarch slurry and cook for 1-2 minutes, or until the sauce thickens to your desired consistency.
- Serve: Arrange the abalone on a platter with steamed vegetables (such as broccoli or bok choy) on the side. Pour the rich sauce over the abalone and vegetables before serving.
