材料
- 500 克生蠔(14-18 隻)
- ½ 湯匙玉米粉
- 3 片薑
- 2 棵蔥,切成 5 厘米長的段
- 1 瓣蒜,切碎
- 1 湯匙中國紹興酒
醬汁:
- 3 湯匙雞湯
- 1 湯匙糖
- 1 湯匙醬油
- 1 湯匙中國料酒
- 1 茶匙麻油
- 2 湯匙玉米粉
- 白胡椒粉
製作說明
- Clean the oysters in cold water, then soak in a mixture of ½ tablespoon cornflour and 1 teaspoon salt for 10 minutes. Rinse and drain well.
- Pat the oysters dry and coat lightly with cornflour.
- In a small bowl, mix all sauce ingredients. Set aside.
- Heat 1 tablespoon of oil in a skillet over medium-high heat and pan-fry the oysters until golden on both sides. Remove and set aside.
- In the same skillet, heat 2 teaspoons of oil. Add ginger and stir until fragrant, then add green onions and garlic. Stir-fry for 1 minute.
- Add 1 tablespoon cooking wine, cooking for another minute. Return the oysters to the skillet and pour in the sauce. Cook for 1 minute until the sauce thickens slightly, then serve on a plate.
