- 1 塊澳洲頂級黑安格斯 OP-肋眼牛排(帶骨肋眼,MS 2+)
製作說明
- 預熱烤箱至 400°F(約 200°C)。
- 將牛排從冰箱中取出,並均勻地撒上大量的鹽和胡椒進行調味。
- 在高火上加熱鑄鐵鍋或平底鍋(讓鍋子變得非常熱)。
- 將牛排放入鍋中,並讓它靜置 2 分鐘。此時牛排應該不再粘在鍋底,並會形成金黃色的外殼。如果外殼還沒變成金黃,將牛排放回鍋中再煎一會兒。
- 當牛排的外殼變得金黃酥脆時,將牛排翻面,再煎 2 分鐘,直到另一面也形成外殼。
- 當兩面都形成漂亮的外殼後,將牛排竪立在脂肪邊上約 30 秒,直到形成外殼。
- 然後將牛排翻回最初煎過的一面,放入 400°F 的烤箱中,約 8 分鐘。
- 將鍋從烤箱中取出後,放回爐火上,用低火加熱。
- 向鍋中加入黃油、百里香、大蒜和青蔥。
- 當黃油融化後,開始將鍋中的黃油醬汁澆在牛排上。用一隻手傾斜鍋,另一隻手迅速將醬汁舀起並澆灌在牛排上。
- 這樣做 2 分鐘後,檢查牛排的熟度 - 目標是做到完美的五分熟。
