製作說明
- 處理魚柳,去除任何魚刺,如果需要可使用魚鉗。將鮭魚放在切菜板上,皮朝下,並將刀片平行於切菜板輕輕滑動,去除魚皮。用鹽輕輕調味魚柳。
- 將蔥切段,將白色和綠色部分分開,備用。
- 在不粘鍋中加入 1 湯匙植物油,任何無味油都可以。將鍋加熱至中高火,當鍋熱時,加入魚柳並將每面煎至金黃色。
- 用白葡萄酒去燒鍋,加入蔥的白色部分、醬油、檸檬汁和蜂蜜,混合均勻後轉至低火。讓魚繼續煮約 10 分鐘,或者依照你的喜好來調整熟度。鮭魚可以煮至五分熟,這樣魚肉會比較濕潤。
- 從鍋中取出魚柳,放置在加熱過的餐盤上。
- 將黃油加入醬汁中並混合均勻,然後加入蔥的綠色部分,並保留一些額外的綠色部分以作為裝飾。將醬汁倒在魚上,並用綠蔥作為裝飾。
