材料
製作說明
- 將豬肩排放在砧板上,蓋上保鮮膜。用肉槌輕拍肉塊,使其變嫩並壓平,注意不要敲到骨頭。修剪掉排外圍多餘的脂肪部分。
- 將排放入碗中或大型密封袋內。加入橄欖油、蘋果醋和所有調味料。蓋好後放入冰箱冷藏,至少醃製 30 分鐘,最多可達 24 小時。
- 預熱瓦斯烤爐至 450-500°F(約 230-260°C)。清潔烤網。將肉片(確保沒有多餘油滴)放在烤架上,每面烤約 5-6 分鐘,直到表面微焦、內部溫度至少達到 145°F(約 63°C)。我個人會烤到稍高的溫度。
- 讓肉休息 3-5 分鐘後即可上桌享用。
