檸檬香草干貝義大利麵食譜

- 將干貝解凍。
- 開始煮一鍋加鹽的水,煮沸後放入義大利麵,直到煮至剛好 al dente。根據包裝建議的時間提前幾分鐘開始品嚐:麵條要有點柔軟但內部仍稍微有韌性,通常約 7 至 8 分鐘。煮熟後瀝乾義大利麵。(如果麵條先煮好,而醬還未完成,可以將麵條加回鍋中,並淋上一點橄欖油,避免黏住。)
- 同時,在淺盤中混合 4 杯室溫水與 2 湯匙猶太鹽,將干貝放入水中,靜置 10 分鐘。
- 取出干貝並擦乾。輕輕灑上一些猶太鹽調味。將油加熱至大火,使用中型煎鍋時,可以分兩批煎干貝。油熱後,加入干貝,不翻動,煎 2 至 3 分鐘,直到底部形成均勻的金黃脆皮。
- 用夾子翻轉干貝,再煎 2 至 3 分鐘,直到底部再度形成脆皮,並且干貝的中心幾乎不再透明。將干貝取出放在盤中,關火。
- 將火力轉至低火,加入奶油並讓其融化。加入檸檬皮屑、大蒜末和切碎的香草。用鍋鏟刮鍋底,將鍋底的焦香物刮起,煮 1 分鐘直到香味四溢,調整火力,使大蒜微微滋滋作響,但不要讓其變焦。
- 加入牛奶、煮熟的麵條、猶太鹽和蔬菜,將火力調至中火,煮至蔬菜稍微軟化。將煎好的干貝放回鍋中,再煮幾秒鐘直到熱透。加入大量現磨黑胡椒,試味並根據需要再加入鹽。若需要,可以淋上橄欖油並撒上刨絲的帕瑪森起司。立即享用。
