材料

  • 2片海鯛魚柳
  • 少許橄欖油
  • 1茶匙蒜蓉
  • 1茶匙薑蓉
  • 2條青辣椒
  • ¼茶匙紅辣椒粉
  • ½茶匙薑黃粉
  • ½茶匙印度綜合香料(garam masala)
  • 半個青檸汁
  • 100克無鹽牛油

製作說明

  1. 將坦杜里牛油的所有材料連同適量調味料放入小型食物處理機或使用手提攪拌機攪拌至順滑。將混合物刮到保鮮紙上,再利用保鮮紙將其捲成圓柱狀。扭緊兩端封住牛油,放入雪櫃冷藏至變硬。此牛油可在雪櫃保存一星期,或冷藏至多三個月。
  2. 燒熱一個厚底煎鍋,加入少許橄欖油。將魚排調味,然後皮朝下放入鍋中煎煮約4至5分鐘,直至魚皮酥脆且大部分熟透。小心翻面,加入一大匙坦杜里牛油,並在牛油溶化時不停將其淋在魚排上。立即上碟,並淋上鍋中剩下的醬汁一同享用。
