不同類型的培根

最初,製作培根是為了在冬季保存肉以維持生計。今天,不需要醃製肉類以備後用,但它是如此美味,以至於我們繼續這樣做。
培根是怎麼做的?
傳統上,豬肉塊被保存在鹽和灰中以醃製肉,然後最終熏制並儲存在地窖中。
如今,培根是用鹽、糖和硝酸鹽的混合物醃製的。硝酸鹽賦予它粉紅色。可以添加其他香料和調味料,包括黑胡椒、楓糖漿或辣椒粉。然後它可能會被熏製或使用液體熏制以賦予它額外的味道。

牛排培根:
