1 x AUSTRALIAN BARRAMUNDI FISH FILLETS BONELESS AND SKIN-ON (2 X 140G PER PACK)
2 tablespoon pesto
2 teaspoon butter
2 cup cherry tomatoes
salt and pepper to taste
1. Rinse fish and pat dry with paper towels. Season with salt and pepper and set aside.
2. Heat butter in the pan. Add pesto and stir to combine.
3. Add barramundi fillets and tomatoes to the mixture. Cook on medium high heat for 3 minutes on each side. Baste with sauce.
4. Top fillets with chopped cilantro and serve.
