材料

  • 8 塊梅頭豬排

  • 2 枝迷迭香

  • 8 個蒜瓣,搗碎

  • 1 茶匙茴香籽

  • 1 茶匙蘋果醋

  • 1 茶匙橄欖油

  • 鹽和胡椒粉

  • 2 個青蘋果

  • 1 塊奶油

  • 1 茶匙紅糖

製作說明

  1. 烹調前一天,醃製豬扒將豬扒、迷迭香、蒜瓣、茴香籽、蘋果醋、橄欖油、鹽和胡椒放入碗中用手攪拌均勻蓋上碗蓋,放入冰箱冷藏一夜

  1. 大約在食用前 2 小時,準備煙燻蘋果醬將燒烤爐預熱至 150°C。 用錫箔紙包裹青蘋果,直接放在炭火上在炭火中加入一大塊木塊或木屑,然後蓋上蓋子每隔 10 分鐘翻動一下錫箔紙中的蘋果,直到它們變軟、塌陷為止從燒烤架上取下

  1. 烹調前 1 小時,將醃製好的豬扒從冰箱中取出,使其達到室溫

  1. 待燻蘋果冷卻到可以處理但仍有溫度時,去除較大的變黑表皮和籽將蘋果與奶油和紅糖一起放入攪拌機攪拌至順滑品嚐並加入一小撮鹽調味放在一旁備用

  1. 將燒烤爐預熱至 200°C。

  1. 豬扒放在烤架上,每面烤約 4-5 分鐘將烤好的豬扒移到盤子裡靜置

  1. 豬扒切開,配上煙燻蘋果醬請享用

煙燻蘋果醬燒烤梅頭豬排食譜

材料:

  • 8 pork collar steaks
  • 2 sprigs of rosemary
  • 8 garlic cloves, smashed
  • 1 tsp fennel seeds
  • 1 tsp cider vinegar
  • 1 tbsp of olive oil
  • Salt & Pepper
  • 2 green apples
  • 1 knob of butter
  • 1 tsp brown sugar

製作說明:

  1. A day ahead of cooking, marinate the pork steaks. In a bowl, combine the pork steaks, rosemary, garlic cloves, fennel seeds, cider vinegar, olive oil, salt, and pepper. Mix everything evenly using your hands. Cover the bowl and refrigerate overnight.
  2. Roughly 2 hours before serving, prepare the smoked apple sauce. Preheat a BBQ to 150°C. Wrap the green apples in tin foil and place them directly onto the coals. Add a large wood chunk or wood chips to the coals and close the lid. Turn the apples within the tin foil every 10 minutes until they are soft and collapsed. Remove from the BBQ grill.
  3. Remove the marinated steaks from the fridge 1 hour before cooking to reach room temperature.
  4. Once the smoked apples are cool enough to handle but still warm, remove any larger patches of blackened skin and seeds. Add the apples to a blender with a knob of butter and brown sugar. Blend until smooth. Taste and season with a pinch of salt. Set aside.
  5. Preheat the BBQ to 200°C.
  6. Cook the pork collar steaks on the grill for approximately 4-5 minutes on each side. Transfer the cooked steaks to a plate and let them rest.
  7. Carve the pork collar steaks and serve them with the smoked apple sauce. Enjoy!
