Ingredients:
1 x OCEAN CATCH AUSTRALIAN PRAWNS MARINATED IN CHILLI AND GARLIC (250G PER PACK)
2 tbsp peanut oil
3 garlic cloves, finely chopped
2 eggs, lightly beaten
3 green onions (shallots), trimmed and sliced
5 cups cold cooked jasmine rice
1 1/2 cups frozen green peas
1/4 cup reduced salt soy sauce
1/4 cup sweet chilli sauce
1/2 cup coriander leaves, chopped + extra leaves to serve
Method:
1. Combine 1 tbsp oil & garlic in a large snap lock plastic bag. Add prawns & toss to coat in mixture. Seal & refrigerate for 15 minutes
2. Heat remaining 1 tbsp oil in a wok over high heat. Swirl eggs around wok & cook for 1-2 minutes until set. Fold omelette over & transfer to a plate then roll & slice
3. Add prawns to wok & stir-fry for 2-3 minutes until pink & almost cooked through. Add green onions, cooked rice & frozen peas. Stir-fry until hot. Toss through omelette, soy sauce, sweet chilli sauce & coriander. Scatter with extra coriander leaves & serve
