辣椒蒜蓉大蝦炒飯食譜

材料

  • 250 克虎蝦或用辣椒大蒜醃製的大蝦

  • 2 湯匙花生油

  • 3 瓣大蒜,切碎

  • 2 顆雞蛋,輕輕打散

  • 3 顆洋蔥,切片

  • 1 1/2 杯青豆

  • 1/4 杯低鹽醬油

  • 1/4 杯甜辣醬

  • 1/2 杯切碎芫

製作說明

  1. 在一個大的塑膠袋中,加入 1 湯匙油和切碎的大蒜將大蝦放入袋中,翻拌均勻密封袋口並冷藏 15 分鐘

  2. 在炒鍋中以大火加熱剩餘的 1 湯匙油將打散的蛋在炒鍋中翻炒 1-2 分鐘至凝固

  3. 將煎蛋餅對折,移到盤子裡,然後捲起來切成細條

  4. 在炒鍋中加入醃製好的大蝦,翻炒 2-3 分鐘,直到大蝦變成粉紅色並幾乎熟透。 

  5. 炒鍋中加入蔥段、冷飯翻炒至變熱並充分混合

  6. 加入蛋片、醬油、甜辣醬和香菜碎。 再翻炒一分鐘,使所有材料均勻上色,讓味道融合在一起。

  7. 將炒鍋離火 辣椒蒜蓉大蝦炒飯上桌時,可多放些香菜葉點

材料:

  • 250g tiger prawns or prawns marinated in chilli and garlic
  • 2 tablespoons peanut oil
  • 3 garlic cloves, finely chopped
  • 2 eggs, lightly beaten
  • 3 green onions (shallots), trimmed and sliced
  • 5 cups cold cooked jasmine rice
  • 1 1/2 cups frozen green peas
  • 1/4 cup reduced-salt soy sauce
  • 1/4 cup sweet chilli sauce
  • 1/2 cup chopped coriander leaves + extra leaves to serve

製作說明:

  1. In a large snap lock plastic bag, combine 1 tablespoon of oil and chopped garlic. Add prawns to the bag and toss to coat them in the mixture. Seal the bag and refrigerate for 15 minutes.
  2. Heat the remaining 1 tablespoon of oil in a wok over high heat. Swirl the beaten eggs around the wok and cook for 1-2 minutes until set. Fold the omelette over, transfer it to a plate, and then roll it up and slice it into thin strips.
  3. Add the marinated prawns to the wok and stir-fry for 2-3 minutes until they turn pink and are almost cooked through. Add the sliced green onions, cooked rice, and frozen peas to the wok. Stir-fry until the mixture is hot and well combined.
  4. Toss in the sliced omelette, soy sauce, sweet chilli sauce, and chopped coriander. Stir-fry for another minute to coat everything evenly and allow the flavors to meld together.
  5. Remove the wok from heat. Serve the Chilli Garlic Prawn Fried Rice garnished with extra coriander leaves.
