FIERY XL 虎蝦和胡椒串食譜

原料:

1 X OCEAN CATCH 優質澳大利亞特大虎蝦(500 克)
3 瓣大蒜 ,壓碎
1 紅辣椒 ,切碎
½ 小束歐芹 ,切碎
1茶匙甜煙熏辣椒粉
½ 茶匙 熱熏辣椒粉
4 湯匙 橄欖油
1 罐醃櫻桃辣椒,瀝乾
檸檬角,服務

方法:

1. 將大蒜、辣椒、歐芹、兩種辣椒粉和橄欖油攪拌在一起。攪拌大蝦並調味。蓋上蓋子,放入冰箱醃製至少 30 分鐘,然後穿上烤串,在烤串上撒上一些辣椒,這樣每個烤串就有大約 4-5 只蝦。
2. 點燃燒烤並離開,直到火焰熄滅,煤塊變成白色,中心發光。烤串,或在平底鍋中用高溫煮 3-4 分鐘,直到變成粉紅色和不透明。立即與檸檬汁和大量藏紅花蒜泥蛋黃醬一起上桌。
3. 裝上所有你最喜歡的沙拉和調料。

材料:

  • 500g tiger prawns
  • 3 garlic cloves , crushed
  • 1 red chilli , finely chopped
  • ½ small bunch parsley , finely chopped
  • 1 tsp sweet smoked paprika
  • ½ tsp hot smoked paprika
  • 4 tbsp olive oil
  • 1 jar pickled cherry peppers, drained
  • lemon wedges, to serve

製作說明:

  1. Whisk the garlic, chilli, parsley, both types of paprika & olive oil together. Stir through the prawns & season well. Cover, put in the fridge & leave to marinate for at least 30 mins before threading on to skewers, interspersing them with a few of the peppers, so that each skewer has about 4-5 prawns.
  2. Light a barbecue & leave until the flames die down & the coals turn white with glowing centres. Grill the skewers, or cook in a griddle pan over a high heat for 3-4 mins until pink & opaque. Serve immediately with a squeeze of lemon & plenty of saffron aïoli.
  3. Plate with all your favourite salads and dressings.
