如何準備草飼牛里脊肉牛排?

2 x 新西蘭優質草飼牛里脊牛排(眼柳,227G(8OZ))
1湯匙全黑胡椒粒,或更多口味
2(6 盎司)(1 1/4 英寸厚)里脊牛排
2湯匙黃油
1湯匙蔥末
2湯匙干邑白蘭地
2湯匙紅酒
¼ 杯牛肉湯
2湯匙鮮奶油

方法:

用研缽、研杵或擀麵杖敲碎胡椒粒。將碎胡椒粒壓入牛排中。
在重鍋/煎鍋中用中高溫加熱黃油。加入牛排;做飯,用鉗子轉動,直到變成褐色,每邊大約 2 分鐘。把火調到中火,煮牛排,經常翻動,直到它們開始變硬,中間變熱並略帶粉紅色,每邊大約 5 分鐘。將牛排轉移到盤子裡並蓋上蓋子以保持溫暖。
將蔥攪拌到平底鍋/煎鍋中。倒入乾邑白蘭地和紅酒;慢燉,不斷攪拌,直到減少,大約 2 分鐘。倒入牛肉湯並用文火燉,刮掉煎鍋底部的褐色碎屑,直到醬汁變得光滑,大約需要 2 分鐘。攪拌奶油;煮至熱透,1 到 2 分鐘。
