材料
牛肉塊材料
- 400-500克(14-17¾盎司)牛排,約2厘米(⅞英寸)厚
細海鹽
- 20毫升(4茶匙)清酒或中國米酒(或可用乾雪莉酒替代)
配菜
- 七味唐辛子(日本七味粉),或可使用烤芝麻和少量辣椒片
製作說明
- 將牛肉切成2厘米(⅞英寸)見方的塊,輕輕撒上鹽並混合均勻。放置一旁,準備其他材料。
- 將大蒜切成薄片。輕輕抹油在平底鍋中(最好是無瓷釉的鑄鐵鍋),並將鍋放在中小火上。將切好的大蒜片撒入鍋中,使用筷子(或小夾子)將大蒜片排成一層。將大蒜煮至一面呈淺金色,然後翻面將另一面煎至金黃。不要讓大蒜煎得太深色,否則會有苦味,並根據需要調整火力,避免大蒜過快煮熟。當大蒜呈淺金色並變脆時,將其從鍋中取出。
- 將白菜切成薄片,分成兩份,放入兩個盤子中。將所有醬汁的材料放入小鍋中,放在中火上加熱。將醬汁煮沸後,轉小火繼續燉煮,直到材料濃縮成輕薄的醬汁狀。關火。
- 將用來煮大蒜的平底鍋放在中高火上加熱(無需清洗鍋)。輕輕抹油在鍋中,約90秒後,當油熱時,加入牛肉塊。將牛肉煎至四面金黃,快速翻動,避免煮過頭。將牛肉分配到盤子上。
